Job Summary

The Office of the Lieutenant Governor and Government House (GH) itself is multi-dimensional, supporting several distinct lines of business including constitutional and international protocol matters, ceremonial and hospitality events, and the management and maintenance of Government House as a National Historic Site.

Reporting to the Executive Chef, the Sous Chef leads staff, providing direction on planning and design of menus; plans, organizes, and prepares foods from menu plan; orders, receives and stores food and beverage supplies and other food services items; and ensures that all work areas, equipment, and utensils are maintained and/or stored in a clean, tidy, sanitary, and secure manner at all times. This position acts as a Deputy Executive Chef and together with the Executive Chef, leads a team of casual/contracted kitchen staff to execute the successful catering of all events at Government House.

Job Requirements:
  • Professional credentials that demonstrate experience and education, such as a Journeyman's Certificate/Red Seal or, culinary degree.
  • Completion of Food Safe Level 2; Serve Safe for Managers.
  • Minimum two (2) years' experience in a Sous Chef role in a high quality, professionally dedicated environment. Preference may be given to applicants with three (3) or more years of this experience.
  • Minimum two (2) years' experience in food services, including banqueting, food preparation and management, including experience in 5-star banqueting environment or equivalent.Preference may be given to applicants with three (3) or more years of this experience.
  • Minimum two (2) years' experience in the leadership and supervision of staff.Preference may be given to applicants with three (3) or more years of this experience.
  • Minimum one (1) year's experience with inventory and cost control with food, equipment, labour, and wastage.


Preference may be given to applicants with:
  • Professional credentials that demonstrate experience and education, with Chef de Cuisine Certification (CCC), American Academy of Chefs (AAC), and/or Certified Executive Chef (CEC) accreditation.
  • Minimum six (6) month's experience working in a competitive culinary environment, leading teams through the competitive process.
  • Five (5) or more years of Fine Dining Service experience.


Provisos:
  • Standing/Walking (constantly): over and on various surfaces including carpet, tile, and rubber mats and for long periods of time.
  • Crouching (occasionally): to lift trays, clean and stock shelves.
  • Kneeling/Crawling (occasionally): to clean or pick-up debris.
  • Stooping (frequently): to load carts and trays.
  • Reaching Overhead/Extending (frequently): to stock supplies, carry trays, setting-up banquet tables.
  • Lifting/Carrying (frequently): tables, food trays, ice buckets. Average weight 25lbs, maximum weight 50lbs.
